The Regional Cuisines of Chinese Cooking (Part 3 of 4)

Shanghai: The Eastern Cuisine

If you follow the Yangtse River eastward from the Sichuan region, made you come to Eastern China, which lies on a vast plain of the Yangtze River and ends at the river delta. TheirKitchens are equipped with a wide variety of fish and water sports, such as carp, clams, mullet, grouper and shrimp. Minced chicken and bean curd strips are also a specialty of this province. Foods are often arranged in an attractive floral patterns before serving.

Zhejiang province is well watered by the Yangtze River, laced with countless complex system of lakes, marshes, ponds, lakes, and several channels of the river, ideal for ducks, fish, frogs and eels. Zhejiang cuisine is known thatthe least greasy of the three, and well-regarded for its light, fresh, delicate, soft foods, with smooth, but rich aroma. In Part III, I would like to share with you some of the ideas of a famous writer, Michael Pollan, in his two bestselling books: The Omnivores Dilemma and In Defense of Food. Something to Think About the author has a point to be a meaning in what and how we eat, we always have the big picture in mind,instead of isolated small details that are only part of the grand scheme of things. With respect to food, nutrients such as proteins, vitamins, Omega-3, and so on are only parts of the food. Over-focus on these things seems to benefit the business man more than their own health. Why? One obvious fact is that the human body is greater than the sum of its parts. Else, we would all be reduced to mechanical robot. Similarly, the food more than the sum of its nutritional ingredients. Totake it further, our health depends on the health of the food chain, of which we are a part. How healthy foods depend on ecology, good soil, healthy plants, healthy animals that eat the plants and natural processing by humans for their own use. May I add that in the real world, a system is always greater than the sum of its parts. In your dream world is a system in the amount of one or two of the parts that you know to happen. What to eat The author proposes a commonsensical way of what we should eatin just seven words: eat food. Not too much. Most of the plants. It also seems clear that we need to eat. But we really need to eat? If we give in the supermarket, most of the things we have found, such as processed food packaging are printed with a lot of eatables nutritional information on them. Food should be healthy and natural, without the need for a detailed trumpets its nutritional value. But that is the situation in our society today.
